This lighter version keeps the crunchy texture you want while cutting the oil and calories, making it a healthier snack or a satisfying addition to any meal.
Use whatever vegetables you have on hand — carrots, daikon, Napa cabbage, bell pepper, scallions are ideal — and feel free to substitute parsnips, sweet potatoes, snap peas, or any other firm vegetable that needs using. Keeping the vegetables similarly sized helps the pakora cook evenly and develop a consistent crisp exterior.

Ingredients
- 1 cup julienned carrot
- 1 cup julienned daikon radish
- 1 cup shredded Napa cabbage
- 1 red bell pepper, julienned
- 4 scallions, julienned
- 1 jalapeño pepper, diced small
- 1 cup chopped fresh cilantro
- 1/4 teaspoon Himalayan sea salt
Flour Ingredients
- 1/2 teaspoon garam masala powder
- 1/2 cup garbanzo bean flour (chickpea flour)
- 1/4 cup rice flour
Instructions
- Prepare the vegetables: put the julienned carrot, daikon, shredded Napa cabbage, red pepper, scallions, jalapeño, and chopped cilantro into a medium bowl. Sprinkle with the salt, toss thoroughly, and let sit for about 10 minutes to draw out a little moisture. After resting, stir in one tablespoon of water to help bind the mixture.
- In a small bowl, whisk together the garam masala, garbanzo bean flour, and rice flour. Sprinkle about half of this dry mixture over the vegetables and mix to combine. Add the remaining flour mixture and mix well until the vegetable mixture is evenly coated and begins to hold together.
- Using your hands, form the batter into eight compact balls, then gently press each into a flat pancake about 1/2-inch thick. The mixture may feel slightly crumbly, but it will firm up during cooking and hold its shape once crisped.
- Preheat the air fryer to 390°F (approximately 200°C) if your model requires preheating. Arrange the pakora in a single layer in the air fryer basket, making sure they do not overlap. Cook for 6 to 8 minutes, flipping once halfway through, until the edges are golden and crisp.
- Remove the pakora and let them rest briefly to set. Serve warm with a mint chutney, cashew dill dressing, or any sauce you prefer. These are excellent with yogurt-based dips or tangy chutneys and pair nicely with fresh salads or grain bowls for a fuller meal.
Notes
The vegetables should be cut to similar lengths, roughly 1.5–2 inches long, so the pakora cooks evenly. If the mixture seems dry, add a teaspoon or two of water at a time until it holds together when pressed. If you prefer extra crispiness, cook an additional minute or two, watching carefully to avoid burning.
