When we lived in Las Vegas, we often gathered for dinner with my in-laws. We stayed with them for a while when we first arrived, and beyond that it was simply a favorite way to spend time together. One of the highlights was my father-in-law’s grilled pork chops. He taught Justin how to grill so that the meat comes off tender, juicy and perfectly cooked every time.
J’s mother seasons meat in a straightforward, reliable way that we love: a little salt and pepper, garlic powder, and Herbes de Provence. The combination is simple but very tasty, and it’s an easy method to repeat on busy weeknights.

Questions about grilled boneless pork chops:
- How long should pork chops stay on the grill? Cooking time depends on thickness. For chops about 1″ thick, plan for roughly 5–6 minutes per side. Use an instant-read thermometer and monitor the internal temperature.
- What is the ideal internal temperature? Cook pork chops to 145°F for a juicy, safe result.
- How hot should the grill be? Preheat to medium-high or just below medium-high.
- Can I use bone-in pork chops? Yes—bone-in chops work well and are delicious.
- Can I substitute other herbs? Absolutely. Use whatever herbs you enjoy.

Ingredients
- Cooking spray
- 4 pork chops Boneless or bone-in, about 1″+ thick
- 1 teaspoon Kosher salt
- ¼ teaspoon Ground black pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Herbes de Provence
Instructions

Remove pork chops from the refrigerator 15–20 minutes before grilling to take the chill off.

Spray the grill grates with cooking spray and preheat to medium-high.

Season both sides of the pork chops with kosher salt, black pepper, garlic powder and Herbes de Provence.

Place the chops on the preheated grill.

Grill about 5–6 minutes per side, turning once. Timing varies by chop thickness and grill—cook until the thickest part reaches 140°F. Remove from the grill when done.

Transfer to a clean plate, tent with foil and rest for 10 minutes before serving.
