What is Baked Brie?

Baked Brie is simply a wheel of Brie heated until the interior becomes warm and spreadable while the white rind remains intact. Sometimes it’s wrapped in puff pastry, but it’s often baked as-is and finished with sweet jams, nuts, or fruit. The contrast of creamy cheese and sweet topping makes it a classic appetizer.

Ingredients You Will Need

Brie Cheese: A wheel of Brie (8-ounce or slightly larger) works well. Choose a medium to large wheel for easy serving.

Fig Jam: Fig jam is my preferred topping, but other fruit preserves work too. Look for fig jam near specialty cheeses or gourmet crackers if you can’t find it in the jam aisle.

Other jam options:
– Raspberry jam
– Peach preserves
– Blackberry jam

Fresh Figs: If figs are in season, slice a few to top the jam. They add freshness and visual appeal, though the recipe is still excellent without them.

Pecans (optional): Chopped nuts add crunchy texture; walnuts or almonds are good substitutes.

Fresh Herbs: A sprinkle of chopped rosemary or a few thyme sprigs brightens the dish and balances the sweetness.

How to Make Baked Brie with Fig Jam

Baked Brie is an elegant appetizer that’s surprisingly easy to prepare, even for beginners. Follow these simple steps for a perfect, melty result.

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with a piece of parchment paper slightly larger than the Brie wheel to make transferring easier.
  2. Place the Brie wheel in the center of the parchment and spread fig jam generously and evenly over the top, letting a little jam reach toward the edges.
  3. Top with sliced fresh figs and chopped pecans if using.
  4. Sprinkle with chopped rosemary or thyme for flavor and garnish.
  5. Bake for 20–25 minutes, until the center is soft and warm.
  6. Carefully lift the Brie on the parchment or slide a sturdy spatula underneath to transfer it to a serving platter — the melted cheese will be soft and wobbly, so handle with care.

Do I need to remove the rind?

No. Keep the white rind on the Brie. It adds flavor and helps contain the melted cheese as it bakes, so the wheel stays intact for serving.
