✔️ Why should you try it?
- Perfect for parties and gatherings
- Light, refreshing and cooling
- A quintessential summer drink
- Uses seasonal fruit for the best flavour
🥘 Ingredients
- 15 strawberries
- 3 limes
- 2 tablespoons caster sugar
- 3 sprigs fresh mint
- 300 ml white rum (omit for a mocktail)
- 600 ml soda water
- Ice, to serve
🔪 Instructions
1. Halve the strawberries and quarter the limes.
2. In a large jug, combine the rum, soda water and caster sugar. Stir well until the sugar has dissolved.
3. Add the halved strawberries, lime quarters and mint leaves. Gently press the fruit with a wooden spoon if you want extra colour and flavour, but avoid over-muddling unless you prefer it very pulpy.
4. Chill the jug in the fridge for up to 6 hours. Add crushed or cubed ice just before serving and give the mixture a good stir.
📖 Variations
- Swap or combine strawberries with raspberries or blueberries.
- Use organic, locally grown strawberries for the freshest taste.
- Muddle the strawberries lightly for a pretty pink hue; use a wooden spoon if you don’t have a muddler.
- Turn it into a non-alcoholic mocktail by leaving out the rum and topping with more soda or sparkling water.

🥡 Storage
Prepare the cooler in a jug and keep it refrigerated for up to 6 hours before serving. Stir well before adding ice to ensure the flavours are evenly distributed.
