- 1 cup all natural peanut butter, only ingredients should be roasted peanuts and salt
- 2/3 cup pure maple syrup
- 1 tablespoon vanilla extract
- 1 teaspoon baking powder
- 1/2 cup coconut flour
- 1/8 teaspoon salt
- 2 eggs
- coconut palm sugar, to sprinkle on top

In a large bowl, use a mixer to combine the peanut butter, maple syrup, and vanilla extract until smooth.

Add the eggs and beat well until fully incorporated.

Stir in the coconut flour, baking powder, and salt; mix until the dough comes together.

Drop rounded spoonfuls of dough onto a baking sheet (an ice cream scoop with a release works well).
