2021 update: This recipe was first shared in 2014. I’ve refreshed the post with a few tips to help you make the best apple crisp possible.
Fruit crisps have become my go-to desserts because they’re unfussy and reliably delicious. If you’ve never made one, don’t be intimidated—crisps are forgiving and simple to assemble.
At their core, crisps have two main components: the fruit filling and the crunchy topping. Apples and stone fruits work particularly well because they hold their shape during baking, though berries can be used if you prefer.

The topping is what sets a crisp apart—an oat-based streusel that bakes to a crunchy, buttery finish. For this recipe the topping is straightforward: melted butter mixed with rolled oats, flour and brown sugar, broken into coarse crumbs and spread over the apples.
Rolled oats (old-fashioned oats) are the ideal choice here; they create the best texture in baked goods. Steel-cut oats can be used for a chewier result, while instant or quick oats are not recommended because they won’t give the same structure.

What is an apple crisp?
An apple crisp is a simple baked dessert with a sweetened apple filling and a crumbly, streusel-style topping. Unlike a cobbler, which uses a biscuit-like or batter topping, a crisp’s topping contains oats, giving it extra texture and a slightly nutty flavor. Apple crisps are quick to prepare and perfect for showcasing fall spices like cinnamon, nutmeg, ginger and cloves.

Use a combination of apple varieties for the best flavor. Tart Granny Smith apples balance sweet Gala or Fuji apples nicely, giving a complex sweet-tart filling. If you prefer one type, all-Gala or all-Granny Smith will still taste great.
Before baking, I love tasting a piece of the spiced apple mixture with a bit of the oat topping—it’s a small indulgence, but it helps ensure the flavors are balanced.

Tips for the best apple crisp
Choose the right dish: An 8×8-inch baking dish yields thicker layers of apples and topping. A 9×13-inch pan works if you need more portions, but the layers will be thinner. Glass, metal or cast-iron skillets all work well.
Use fresh spices: Fresh spices have more aroma and intensity—check your spice cabinet and replace anything past its prime.
Make or use apple pie spice: A homemade blend of cinnamon, nutmeg, ginger and cloves gives the best flavor, but store-bought mixes are convenient and fine to use.
Mix apple types: Combining tart and sweet apples gives the best balance. An apple corer/slicer can speed up prep.
Serve warm with toppings: Vanilla ice cream or fresh whipped cream make classic accompaniments and bring out the warm spices.
Variations for apple crisp
To make the recipe vegan, substitute vegan butter for regular butter. For a gluten-free version, use a 1:1 gluten-free all-purpose flour. To make a smaller batch, halve the recipe and bake in a smaller pan such as a 5×7-inch loaf pan.

This fall apple crisp with an oat topping is a timeless dessert you’ll return to each autumn. It’s an easy way to bring cozy, spiced flavors to the table—perfect for apple picking season or any chilly evening when you want a warm, comforting dessert.
