Fish makes a fast, satisfying weeknight dinner. This salmon can go from frozen fillet to finished plate in about an hour. It does benefit from a 30-minute marinade (avoid marinating longer or the texture can change), then only about 20 minutes in the oven to finish. The result is tender, flaky salmon with a caramelized, slightly sweet coating.

The marinade is just a few pantry staples: real maple syrup, soy sauce, and minced garlic. Using good-quality maple syrup adds the best flavor, but the recipe works well with typical grocery-store syrup too. I like to serve this with rice pilaf and roasted broccoli for a complete, balanced meal.

Ingredients

  • 1-2 pound salmon fillet
  • ÂĽ cup real maple syrup
  • 2 tablespoon soy sauce
  • 2 cloves garlic minced
  • ½ teaspoon kosher salt
  • black pepper

Instructions

  • In a small bowl, whisk together the maple syrup, soy sauce, and minced garlic.
  • Line a 9×13-inch baking dish with two pieces of foil slightly overlapping. Place the salmon in the dish skin-side down so the foil can be folded up around the fish to enclose it.
  • Season the salmon with kosher salt and black pepper, then pour the maple mixture over the fillet. Fold and seal the foil and allow the salmon to marinate for 30 minutes—no longer.
  • Preheat the oven to 400°F (200°C). Bake the covered salmon for 15 minutes. Carefully open the foil and place the salmon under the broiler for 3–5 minutes to caramelize the top. The fish is done when it flakes easily at the thickest part.
