This salad requires some prep—there’s a fair amount of chopping involved. You’ll need a full head of cabbage, several cucumbers, and a bunch of green onions. I like to slice the vegetables fairly finely so every bite has a good balance of texture and flavor.

Ingredients for the salad.

The dressing is what makes this salad stand out. My version includes olive oil, rice vinegar, walnuts, spinach, lemon and lime juice, fresh basil, chives, avocado, a shallot, jalapeño, nutritional yeast, and cilantro. I adapted the original slightly to suit my taste, but the core components remain the same.

Once the chopping is finished, the recipe comes together quickly. Chop the cabbage, cucumbers, and green onions and combine them in a large bowl. Set that aside and move on to the dressing.

In a blender, combine the olive oil, rice vinegar, lemon and lime juices, nutritional yeast, walnuts, avocado, shallot, jalapeño, basil, chives, spinach, and cilantro. Blend until smooth and creamy.

Pour the dressing over the chopped vegetables and mix thoroughly so everything is evenly coated. The avocado gives the dressing a thick, creamy texture; it might not look like much at first, but it spreads and flavors the salad beautifully.

I tested and adjusted the seasonings as I went, since I prefer bold, balanced flavors and I’m picky about my salads. The final result is bright, herbaceous, and satisfying—great on its own, scooped up with chips, or piled on toast.
