These quinoa bowls are a complete, nutritious meal. Top with seeds, toasted nuts, crumbled cheese, or a soft-fried egg for variation. The dressing can be made a day ahead. Use any combination of vegetables you have on hand; the mix of Brussels sprouts, sweet potato, zucchini, and cherry tomatoes is especially attractive and flavorful.
For the roasted vegetable quinoa bowls
  1. 2–2 1/2 pounds assorted vegetables, peeled if necessary, and chopped into bite-sized pieces (for example: Brussels sprouts, zucchini, carrots, sweet potatoes, cherry tomatoes)
  2. 1/4 cup extra virgin olive oil
  3. Kosher salt and freshly ground black pepper
  4. 1 teaspoon minced fresh thyme (optional)
  5. 1 teaspoon minced fresh rosemary (optional)
  6. 2 cups quinoa
  7. Pumpkin seeds or chopped nuts, for serving (optional)
For the basil yogurt dressing
  1. 3/4 cup loosely packed fresh basil leaves
  2. 1/4 cup loosely packed baby spinach
  3. 1 clove garlic, chopped
  4. 6 tablespoons plain yogurt (or substitute to make vegan)
  5. 2 tablespoons white wine vinegar
  6. 1/2 teaspoon kosher salt
  7. 1/4 teaspoon freshly ground black pepper
  8. 6 tablespoons extra virgin olive oil
Instructions
  1. Preheat the oven to 425°F (220°C) and line two baking sheets with foil or parchment. Toss the vegetables with the olive oil, thyme and rosemary if using, and season with salt and pepper. Divide them between the baking sheets, separating longer-cooking vegetables (carrots, sweet potatoes) from quicker-cooking ones (zucchini, tomatoes). Roast, stirring occasionally, until the vegetables are tender and beginning to char, 20–30 minutes.
  2. While the vegetables roast, rinse the quinoa in a fine mesh sieve under cold water. Transfer to a pot with 4 cups of water and bring to a boil. Reduce the heat, cover, and simmer for about 15 minutes. Drain any excess liquid, return the quinoa to the pot, place a paper towel over the top, and cover. Let it rest for 10–15 minutes to finish steaming and fluff up.
  3. Make the dressing by combining basil, spinach, garlic, yogurt, vinegar, salt, and pepper in a food processor. Pulse to combine, then run the motor and slowly drizzle in the olive oil until smooth. Transfer to an airtight container and chill if making ahead.
  4. To assemble, divide the quinoa among bowls, top with roasted vegetables, drizzle generously with basil yogurt dressing, and finish with pumpkin seeds or chopped nuts if using. Serve warm or at room temperature.
