Philly Cheesesteak Sliders Recipe: Savory Mini Sandwiches

These Philly Cheesesteak Sliders are fast and simple to prepare. Tender deli roast beef, sautéed onions and green peppers, and melted provolone are layered on soft Hawaiian rolls, brushed with a garlicky butter sauce, then baked until golden and bubbly. They make an ideal weeknight dinner, party appetizer, or game-day snack.

Ingredients For Philly Cheesesteak Sliders

  • Hawaiian rolls (12)
  • Deli-sliced roast beef (about 1½ lbs)
  • Butter (10 tbsp total, divided)
  • Yellow onion (¾ cup, diced)
  • Green pepper (1, diced)
  • Salt (¼ tsp) and black pepper (¾ tsp)
  • Worcestershire sauce (1½ tbsp, divided)
  • Provolone cheese (6 slices)
  • Garlic powder (1 tsp) and dried parsley (1 tsp)

How To Make Philly Cheesesteak Sliders

  • Preheat the oven to 350°F and position the rack in the middle. Lightly spray a 9 x 13-inch baking dish and set aside.
  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced onion and green pepper with salt and black pepper. Cook, stirring occasionally, until the vegetables are soft and lightly browned, about 8–10 minutes. Remove from heat and set aside.
  • Keeping the rolls intact, slice the 12-pack of Hawaiian sweet rolls in half horizontally. Place the bottom half of the rolls in the prepared baking dish.
  • In a medium bowl, melt 8 tablespoons of butter and whisk in 1½ tablespoons of Worcestershire sauce. Brush half of this mixture over the bottom layer of rolls.
  • Layer the roast beef evenly across the rolls, then spread the sautéed onions and peppers on top of the beef. Arrange the provolone slices over the filling, overlapping as needed so the cheese covers the sliders.
  • Place the top half of the rolls over the assembled sliders. Stir the remaining melted butter with garlic powder and dried parsley, then brush this garlic butter over the tops of the rolls.
  • Tightly cover the baking dish with aluminum foil and bake for 10 minutes. Remove the foil and bake an additional 5 minutes, or until the cheese is melted and the tops are lightly golden. Serve hot.

What To Do If The Rolls Are Browning Too Quickly

If the tops are browning before the cheese is fully melted, either keep the foil on for the entire baking time or add a teaspoon of water to the baking dish and cover again. The steam will slow the browning and help melt the cheese evenly.

Variations For Philly Sliders

  • Add mushrooms: Slice 4 ounces of cremini or brown mushrooms and sauté them with the onions and peppers.
  • Change the cheese: Use a processed cheese sauce (such as Cheez Whiz) in place of or in addition to provolone for a creamier filling.
  • Make it a pizza steak: Spread a thin layer of marinara on the bottom rolls before adding the roast beef and vegetables, then top with rolls and garlic butter.
  • Double the cheese: Add a layer of provolone on the bottom half of the rolls, then add roast beef, vegetables, and another layer of provolone before topping with the roll tops.

  • Preheat oven to 350 degrees and move rack to the middle of the oven. Prepare a 13 x 9 baking dish by spraying it with non-stick cooking spray. Set aside.
  • Over medium heat melt 2 tablespoons of butter in a large skillet. Add diced onions, green peppers, salt, and black pepper, and cook until soft and browned, 8 to 10 minutes. Remove and set aside.
  • Without separating the rolls, cut the 12-pack of Hawaiian sweet rolls in half horizontally. Place the bottom half of the rolls in the prepared baking dish.
  • In a medium bowl melt 8 tablespoons of butter and whisk in Worcestershire sauce. Brush half of the mixture over the top of the bottom layer of the rolls.
  • Evenly top with roast beef slices and spread the onions and peppers in an even layer over the roast beef. Top with provolone slices, overlapping if needed.
  • Add the top half of the rolls. Whisk the remaining melted butter with garlic powder and dried parsley, then brush it over the tops of the rolls.
  • Cover the baking dish tightly with foil and bake for 10 minutes. Remove foil and bake an additional 5 minutes or until cheese is completely melted. Serve hot.
