You can choose between two simple methods — a quick microwave method or a slow cooker method for a hands-off approach. Both produce the same decadent result with minimal fuss.

Technically this is a shortcut fudge rather than traditional stirred fudge, but the texture and flavor are fantastic — sweet, silky and full of caramel pockets from the Rolos.

How to make Rolo Fudge

1. Place the white chocolate and condensed milk together to melt — either in a slow cooker on low or in a large microwave-proof bowl.

2. If using the slow cooker, cook on LOW for about 1.5–2 hours, stirring every 30 minutes until smooth. If using the microwave, heat for 30 seconds at a time, stirring between bursts, until thick and fully melted.

3. Remove from the heat and stir in the vanilla extract and half of the Rolos. Mix quickly so the Rolos keep some structure — a little melting is fine and adds caramel pockets throughout the fudge.

4. Pour the mixture into a baking dish lined with baking paper. Smooth the surface, then press the remaining Rolos gently into the top so they’re evenly distributed. Chill in the refrigerator overnight to set.

  • 400 g White chocolate
  • 397 g Condensed milk x1 tin
  • 2 tsp Vanilla extract
  • 300 g Rolos (removed from packaging) About 8 tubes

Instructions

Microwave method:

  • Put the white chocolate and condensed milk into a large microwave-safe bowl.
  • Microwave for 30 seconds, beat thoroughly, then repeat in short bursts until very thick and smooth.
  • Stir in the vanilla extract and half of the Rolos.
  • Pour into a baking dish lined with baking paper, smooth the top and press the remaining Rolos evenly into the surface.
  • Refrigerate overnight, then cut into small pieces and keep chilled until ready to serve.

Slow cooker method:

  • Place the white chocolate and condensed milk in the slow cooker.
  • Cook on LOW for 1½–2 hours, stirring every 30 minutes, until smooth and combined.
  • Turn off the heat, stir in the vanilla and half of the Rolos.
  • Transfer to a lined baking dish, smooth the surface and press the remaining Rolos into the top.
  • Chill overnight, cut into pieces and store in the fridge until serving.
