- 5 lbs gala apples, cored and diced
- ½ cup (110g) light brown sugar, lightly packed
- ⅓ cup (120 mL) water
- 1 Tbsp cinnamon
- 1 tsp nutmeg
- 1 tsp cloves
- 1 tsp ginger
- ½ tsp salt
- 2 Tbsp lemon juice
Method
- In the Instant Pot bowl, combine all ingredients and stir to mix evenly.
- Close the lid and ensure the steam release is sealed. Cook on manual/pressure for 20 minutes; allow time for the pot to come to pressure first.
- When cooking is complete, release the pressure according to your Instant Pot’s instructions and remove the lid.
- Use an immersion blender to puree the cooked apples until smooth. Alternatively, transfer small batches to a blender or food processor and puree, taking care with hot liquids.
- Let the apple butter cool; it will thicken as it cools. Adjust seasoning or sweetness if desired, then store in jars in the refrigerator or freeze for longer storage.
