California Waldorf Salad
Ingredients
- 5 oz baby spinach about 6 cups
- 1/3 cup plain nonfat yogurt or sour cream
- 1/3 cup mayonnaise
- 2 tbsp lime juice freshly squeezed
- 1 tsp lime zest
- 2 tsp curry powder
- 1/2 tsp honey or sugar
- 1/2 cup celery thinly sliced
- 1/2 cup raisins
- 3/4 cup grapes seedless, halved
- 1 apple unpeeled, cut into 1/3-inch cubes
- 1/2 cup pecans toasted or walnuts

Whisk together the yogurt (or sour cream), mayonnaise, lime juice, lime zest, curry powder and honey in a small bowl until smooth.

In a large bowl, combine the celery, raisins, grapes, apple and nuts. Add about half of the dressing and toss to coat the fruit and nuts evenly.

Just before serving, add the baby spinach and gently toss to combine. Add more dressing if desired and adjust seasoning to taste.
