After sharing my Vegan Chocolate Cake, I was amazed by the response — the photos and reviews showed me you love easy, reliable vegan desserts. That inspired me to create more single-serve versions of favorite recipes, and this Chocolate Mug Cake is one of the best. It’s essentially a mini version of my chocolate cake with the same rich chocolate taste, made quickly in a mug for one. I’ve tested this many times (quality control!) and I know you’ll enjoy it.

What is a mug cake?

A mug cake is a quick, single-serving cake prepared and cooked in a mug, typically in the microwave. It takes only a minute or two to cook and yields a small, moist cake perfect when you want dessert for one. They’re ideal when you don’t want to bake a whole cake but still crave something fresh and warm.

Best tips for making mug cakes

Making mug cakes is straightforward, but a few tips make a noticeable difference. I tested this recipe many times and recommend the following:

  • Use a wide, short mug. This encourages an even rise and helps the cake cook consistently.
  • Stir thoroughly so all ingredients are incorporated, especially the bottom of the mug—scoop up from the base a few times.
  • Adjust cook times for your microwave. The times given are a guideline; lower wattage models may need a few extra seconds.
  • Do not overcook. Overcooking causes a gummy, dry texture. It’s better to slightly undercook—the cake continues to set as it cools.
  • Let the cake cool for 3–5 minutes before eating. This improves texture and flavor, just like letting a cake or brownie cool slightly before serving.
  • There are also oven instructions below if you prefer baking in a ramekin.

Chocolate Mug Cake (Vegan)

Servings: 1 mug cake
Prep Time: 4 mins
Cook Time: 1 min
Total Time: 5 mins
This vegan Chocolate Mug Cake is ready in minutes and packed with chocolate-y flavor. Simple, quick, and perfectly portioned for one.

Ingredients

  • 1 tablespoon oil (15g) — any neutral oil of choice
  • 3 tablespoons vegan milk (45 mL) — any plant milk works
  • 2 tablespoons granulated sugar (24g) — cane, coconut, or brown sugar work
  • 2 tablespoons unsweetened cocoa powder (10g)
  • 3 tablespoons all-purpose flour (23g) — or gluten-free 1:1 baking flour
  • 1/4 teaspoon baking powder (1.2g)
  • 1/8 teaspoon sea salt (0.4g)
  • 1/2 teaspoon vanilla extract (2.5 mL)
  • 1 tablespoon chocolate chips (14g)

Instructions

  1. In a mug, combine the oil, milk, sugar, and cocoa powder. Whisk for about 15 seconds until smooth.
  2. Add the flour, baking powder, sea salt, and vanilla. Stir for about 30 seconds, scraping the bottom to ensure everything is incorporated. Fold in the chocolate chips and sprinkle a few on top if desired.
  3. Microwave: Cook for 65 seconds in an 1100W microwave. If your microwave has lower wattage (e.g., 850–900W), add a few seconds but do not exceed 70 seconds. The cake may be slightly underdone in the center—this is fine, as it will finish setting while cooling. Let it cool 3–5 minutes before eating.
  4. Oven option: Preheat oven to 350°F (180°C). Bake in a 3.5-inch oven-safe ramekin for about 25 minutes. Let cool 5 minutes before serving.

Notes

Gluten-free or regular flour

This recipe works with regular all-purpose flour or a 1:1 gluten-free baking flour like Bob’s Red Mill. If using dutch-process or very dark cocoa, consider adding an extra 1/2 tablespoon sugar to balance bitterness.

Mix in the order specified to avoid overworking the flour. Avoid overcooking—slightly underbaked is better than dry.
