Instructions

When the syrup is within 5°F of that stage, begin whisking the egg whites at medium speed until frothy. Once the syrup reaches the soft-ball stage, remove from heat, raise the mixer speed to high, and slowly pour the syrup into the egg whites while avoiding the bowl sides. Continue whisking until soft peaks form.
  4. Fold the almond-flour mixture into the meringue until homogeneous and flowing like slow-moving lava. Take care not to overmix.
  5. Transfer the batter to a piping bag fitted with a round tip and pipe rounds onto parchment-lined or silicone-lined baking sheets. Let them rest briefly if needed.
  6. Preheat the oven to 300°F (150°C).

  3. Stir in the instant espresso powder, then add the softened butter one tablespoon at a time. Increase the mixer speed and continue until the filling is glossy and fully combined. Depending on ingredient temperatures, this can take up to 10 minutes.
  4. Pair cooled shells and pipe a small amount of filling onto one shell, then sandwich with its mate.
  5. For best flavor and texture, refrigerate the assembled macarons in an airtight container for 24 hours if possible. Remove a few minutes before serving to let the filling soften slightly.
