Ingredients

BOTTOM LAYER:

  • 100 grams dark chocolate, good quality, roughly chopped (about 3.5 oz)
  • 250 grams unsalted butter, softened (about 8 oz)
  • 2 cups brown sugar
  • 4 extra-large eggs
  • 2 teaspoons vanilla essence
  • 1 1/4 cups plain flour

TOP LAYER:

  • 160 grams unsalted butter, softened (about 5.5 oz)
  • 3/4 cup brown sugar
  • 3/4 cup caster sugar (superfine sugar)
  • 1/4 cup milk
  • 1/2 tablespoon vanilla essence
  • 1 1/2 cups plain flour
  • 1/3 cup chocolate chips

Instructions

  1. Preheat your oven to 180°C (350°F). Line an 8 x 8 inch (20 x 20 cm) square cake pan with baking paper, leaving some overhang on the sides to make removal easier.
  2. BOTTOM LAYER: Melt the dark chocolate gently (use a double boiler or short bursts in the microwave) and set aside to cool for a minute or two.
  3. Meanwhile, in a mixing bowl beat the softened butter and brown sugar together until pale and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla essence.
  4. Fold the melted chocolate into the butter-and-egg mixture. Add the flour and stir only until just combined — avoid over-mixing to keep the base tender.
  5. Pour the batter into the prepared pan and bake for about 30 minutes, or until the bottom layer is almost set but still slightly soft in the center. Remove from the oven.
  6. TOP LAYER: While the bottom layer is baking, prepare the top dough. Beat the softened butter with both the brown sugar and caster sugar until creamy. Add the milk and vanilla and mix until well combined — the mixture should form a fairly stiff dough.
  7. Stir in the flour until just combined, then fold in the chocolate chips. The dough will be thick and scoopable.
  8. When the bottom layer is nearly done, drop spoonfuls of the top dough evenly over the partially baked bottom. You can press gently in places to fill gaps, but leave the surface slightly uneven so the top can crisp.
  9. Return the pan to the oven and bake for an additional 15–20 minutes, or until the top is golden and a skewer inserted into the top layer comes out with only a few moist crumbs (the middle should remain slightly gooey).
  10. Remove from the oven and allow the brownies to cool completely in the pan. For cleaner slices and firmer texture, chill in the refrigerator until fully set. Use the parchment overhang to lift the slab from the pan, then slice into squares.

Serving and Storage

Slice and serve at room temperature or slightly chilled. Store any leftovers in an airtight container in the refrigerator for up to 5 days; bring to room temperature before serving if chilled. These brownies also freeze well: wrap individual pieces tightly and store in a freezer-safe container for up to two months. Thaw in the refrigerator and then warm briefly if desired.
