Ingredients Needed

  • 2 lb pork roast
  • 5 potatoes, peeled and sliced into wedges
  • 2 medium onions, halved
  • 1 lb bag of baby carrots
  • 2 pkgs brown gravy mix, divided
  • 2 cups water, divided

Ingredients

  • 2 lb pork roast
  • 5 potatoes peeled and sliced into wedges
  • 1 bag of baby carrots
  • 2 medium onions halved
  • 2 pkgs brown gravy mix divided
  • 2 cups water divided

Instructions

  • Spray the inside of your crock pot with cooking spray.
  • Place the pork roast in the slow cooker, fat side up.
  • Arrange potato wedges, halved onions, and baby carrots around the roast.
  • In a small bowl, mix one package of brown gravy mix with 1 cup cold water and stir until combined.
  • Pour the gravy mixture evenly over the roast and vegetables.
  • Cover and cook on low for 5–6 hours (or on high for 3–4 hours).
  • About one hour before serving, whisk the remaining brown gravy mix with 1 cup cold water and pour over the roast and vegetables.
  • Cover and continue cooking for the final hour. Serve hot, spooning gravy over the roast and vegetables.
