Recipe

Ingredients
2 cups watermelon, cubed
1 cucumber, cubed (or substitute jicama)
1 cup blueberries
1/3 cup fresh mint, chopped
1/4 cup feta or blue cheese, crumbled
2 tbsp lime juice
2 tbsp honey
1/2 tsp salt
Pinch of chili powder
Directions
In a large bowl, combine the watermelon, cucumber and blueberries. In a small bowl, whisk together the lime juice, honey, salt and chili powder until smooth. Pour the dressing over the fruit and toss gently to coat. Add the chopped mint and sprinkle the crumbled cheese on top. Chill for 30–60 minutes to allow flavors to meld, then serve chilled.
