For this dip I used cheddar cheese, which melts beautifully and gives the finished dish a rich, tangy flavor. You may notice small pools of fat on the surface as it melts — simply give the dip a quick stir and it blends back in. If you prefer a smoother, more uniform texture, Velveeta is a fine substitute for the cheddar; it melts evenly and creates a creamy finish, though it may take slightly longer to warm through in the slow cooker.

Ingredients
- 8 ounces cream cheese
- 8 ounces shredded cheddar cheese
- 4 ounces bacon diced, cooked crispy & drained
- 2 tablespoons thinly sliced green onion
- 2 tablespoons ranch dressing mix homemade or store-bought
Instructions
- Place all ingredients in a 1.5-quart slow cooker (a larger cooker works too). Stir to combine and cover.
- Cook on HIGH for 1.5 hours, stirring occasionally to ensure even melting.
- Once heated through, switch the slow cooker to warm and keep covered until ready to serve.
