Ingredients Fried Egg Easter Muffins

90 g butter or sunflower/vegetable oil
300 g unbleached all-purpose flour
1 tbsp baking powder
100 g sugar
1 package vanilla sugar (about 0.5 oz)
1 egg
150 g white chocolate, coarsely chopped
1 pinch of salt
125 ml buttermilk
1 tbsp lemon juice or a few drops of natural lemon extract (optional)
1 can of apricots (approximately 420 g drained) — peaches can be used instead
Baking Instructions
1. Preheat the oven to 200 °C (392 °F). Prepare a 12-cup muffin tray with paper liners.
2. In a large bowl, combine the flour, baking powder, sugar, vanilla sugar, and salt.
3. Stir the chopped white chocolate into the dry mixture with a spatula.
4. Drain the apricots, reserving the juice. Keep 12 apricot halves aside for topping.
5. Chop the remaining apricots finely and fold them into the batter.
6. In a separate bowl, mix the melted butter (or oil) with buttermilk, lemon juice (if using), about 75 ml of the reserved apricot juice, and the egg.
7. Pour the wet ingredients into the dry ingredients and mix until the batter has thickened and is just combined. Avoid overmixing.
8. Divide the batter evenly among the prepared muffin cups.
9. Lightly dust each reserved apricot half with a little flour and press one into the center of each muffin.
10. Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted in the center comes out clean and the tops are golden.
11. Let the muffins cool in the tray for a few minutes, then transfer to a wire rack to cool completely.
