This 10-minute blackened tilapia is one of my go-to weeknight meals!

Ingredients

Tilapia fillets:

  • Vegetable oil (about 1 Tbsp. per fillet)

Blackening Powder:

  • 1 Tbsp. smoked paprika
  • 2 tsp. thyme
  • 1 tsp. cumin
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. ground red pepper (optional, for heat)

Instructions

  • In a small bowl, mix the dry spices to make the blackening powder. Moisten each tilapia fillet with a little water or cooking spray, then press both sides into the spice mixture to coat. I typically use about 1 Tbsp. of seasoning per fillet.
  • Heat about 1 Tbsp. of vegetable oil per fillet in a skillet over medium-high heat. When the oil is shimmering and nearly smoking, add the fillets. Cook for about 3 minutes per side, until the fish is opaque and flakes easily with a fork. Remove from the pan and serve immediately.
