Keto Instant Pot Country Style Ribs
Ingredients:
- 2 lb country style boneless pork ribs
- 1½ cup beef broth
Dry Rub
- 1 teaspoon sea salt
- ½ teaspoon freshly ground pepper
- 1½ teaspoon smoked paprika
- 1½ teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- ⅛ teaspoon cayenne pepper
Low‑Carb Barbecue Sauce
- 1 cup no‑sugar‑added tomato sauce
- 1½ tablespoon butter
- 1 tablespoon apple cider vinegar
- ½ tablespoon liquid smoke
- ½ tablespoon Worcestershire sauce
- 1 teaspoon blackstrap molasses (optional)
- 2 tablespoon erythritol granular sweetener (or 2 tbsp coconut sugar for paleo)
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- ½ teaspoon onion powder
Directions:
- Make the sauce: In a small saucepan over medium heat, melt the butter. Stir in tomato sauce, apple cider vinegar, liquid smoke, Worcestershire sauce, molasses (if using), erythritol (or coconut sugar), garlic powder, sea salt, and onion powder. Heat until blended, then remove from heat and set aside.
- Pour beef broth into the Instant Pot inner pot and place the steamer rack (trivet) inside.
- Mix the dry rub: In a small bowl combine sea salt, black pepper, smoked paprika, onion powder, garlic powder, cumin, and cayenne. Stir to combine.
- Place the ribs in a large bowl, add the dry rub, and toss until evenly coated.
- Stack the ribs on the trivet in the Instant Pot.
- Pour half of the barbecue sauce over the ribs, reserving the other half for brushing after cooking.
- Close and lock the Instant Pot lid. Set the steam release to Sealing. Select Pressure Cook (Manual) on High Pressure and set the time for 30–35 minutes.
- When the cook time finishes, allow the pressure to release naturally for about 20 minutes (do not force release). Once the pin drops, open the lid.
- Carefully lift out the trivet and ribs. Transfer the ribs to a serving plate and brush with the reserved barbecue sauce. Serve hot.
