- 2 lb pork roast
- 5 potatoes, peeled and sliced into wedges
- 2 medium onions, halved
- 1 lb bag of baby carrots
- 2 pkgs brown gravy mix, divided
- 2 cups water, divided

Ingredients
- 2 lb pork roast
- 5 potatoes peeled and sliced into wedges
- 1 bag of baby carrots
- 2 medium onions halved
- 2 pkgs brown gravy mix divided
- 2 cups water divided
Instructions

Spray the inside of your crock pot with cooking spray.

Place the pork roast in the slow cooker, fat side up.

Arrange potato wedges, halved onions, and baby carrots around the roast.

In a small bowl, mix one package of brown gravy mix with 1 cup cold water and stir until combined.

Pour the gravy mixture evenly over the roast and vegetables.

Cover and cook on low for 5–6 hours (or on high for 3–4 hours).

About one hour before serving, whisk the remaining brown gravy mix with 1 cup cold water and pour over the roast and vegetables.

Cover and continue cooking for the final hour. Serve hot, spooning gravy over the roast and vegetables.
