
I can’t believe Christmas is next week. Even with a calendar full of holiday activities, I keep thinking I have more time to prepare than I actually do. If you’re feeling the same, you’re not alone.
Here’s what we’ll be eating this week:

Monday: Black Bean Tostadas with Corn Relish. Mexican food feels perfect right now, especially with ripe avocado. These tostadas are quick and simple—the ideal easy dinner to get the week started.
Tuesday: Loaded Philly Cheesesteak Baked Potato. We made these a few weeks ago and everyone loved them. This time I might try them with chicken instead of beef for a lighter twist.

Wednesday: Chili Chicken Lime Burgers. A new recipe I posted last week—these are genuinely delicious and simple to make. I’ll try to double the batch and freeze extras for fast weeknight meals.
Thursday: Slow Cooker Balsamic Shredded Beef. A recipe we didn’t get to last week but are excited to try. Slow cooker beef makes for an easy, flavorful dinner with minimal hands-on time.

Friday: Pizza. There’s nothing better than a homemade pie with the perfect crust. Even if we don’t make pizza on Friday, I like keeping the ingredients on hand—pizza is a flexible, low-effort meal any night of the week.
