Low Carb Air Fryer Meatloaf

I bought my air fryer to make quick, healthier lunches and it quickly became one of my most-used appliances. It’s great for everything from chicken parmesan to roasted vegetables and even corn on the cob.

Low Carb Air Fryer Meatloaf

Although I briefly considered a bacon-wrapped version, I went with a classic low-carb meatloaf that reheats faster and works well for weekly meal prep. The kids asked for it and it was an instant hit.

Leftovers pair perfectly with cauliflower mashed potatoes, bacon-wrapped asparagus, a simple side salad, or cloud bread. You can also slice leftover meatloaf, top it with cheese and crumbled bacon, and bake it into a casserole for a new meal.

Can you make meatloaf ahead of time

Yes. Meatloaf makes excellent leftovers and reheats well. To store, let the cooked meatloaf cool, wrap it tightly in plastic wrap or foil, and keep it in the refrigerator for 3–4 days. To freeze, cook first, cool completely, wrap in aluminum foil and place in a sealed freezer bag. Slicing the meatloaf before freezing makes it easier to reheat individual portions. Using a vacuum sealer can save space and extend freezer life.

How do you reheat meatloaf in the air fryer?

Reheat slices in the air fryer by lightly spraying with cooking spray. Cook at 350°F for about 8–12 minutes, flipping halfway, until heated through.
