- 1/2 medium onion (about 100 g), finely diced
- 3 tbsp panko breadcrumbs
- 2 tsp mayo
- 1 tbsp milk or soy milk
- 1/2 lb (about 250 g) ground beef
- 1/8 tsp nutmeg
- 1/4 tsp black pepper
- 1/3 tsp salt
- 6–8 mini bell peppers
- Potato starch, for dusting
Sauce
- 3 tbsp ketchup
- 1 tbsp Bull-Dog fruit & vegetable sauce (chuno)
- 1 tsp soy sauce
- 1/4 cup water
Instructions
- Combine ground beef, diced onion, panko, mayo, milk, nutmeg, pepper and salt in a bowl. Mix thoroughly and refrigerate briefly if desired.
- Halve and seed the peppers. Dust both sides lightly with potato starch.
- Fill each pepper half with about 2 tbsp of the meat mixture, pressing firmly and allowing the filling to sit slightly proud of the edge.
- Heat oil in a pan over medium-low. Place peppers in the pan and press each down. Cook 2–3 minutes until browned, flip and cook another 1–2 minutes. Add 1 tbsp water, cover and steam 1–3 minutes until cooked through.
- Wipe the pan clean. Mix ketchup, chuno sauce, soy sauce and water in the pan and simmer until slightly thickened.
