This Death by Chocolate Cake is the kind of dessert every serious chocolate lover dreams about. With layers of brownie, chocolate mousse, mocha mousse, cocoa meringue, silky ganache, and mocha rum sauce, it is rich, dramatic, and made for unforgettable celebrations.
This is not an everyday chocolate cake. It is a deeply decadent, multi-layered dessert that takes planning, patience, and plenty of chocolate. If you are looking for the best chocolate cake recipe for a birthday, dinner party, holiday, or milestone occasion, this showstopper is worth the effort. Each thin slice delivers intense chocolate flavor, creamy texture, a little crunch from the meringue, and a glossy finish of ganache.

Why You Must Make:
- This Death by Chocolate Cake earns its name. The recipe uses a generous amount of eggs, heavy cream, cocoa powder, semisweet chocolate, unsweetened chocolate, and butter to create a dessert with serious chocolate intensity.
- The recipe is inspired by famed restaurateur Marcel Desaulniers, whose Death by Chocolate dessert became well known at The Trellis Restaurant in Colonial Williamsburg.
- It is a seven-layer chocolate cake designed for special occasions. The brownie, mousse, meringue, ganache, and mocha rum sauce work together to create a dessert that feels elegant, impressive, and indulgent.
This cake is best approached as a project rather than a quick bake. The finished dessert is stunning, but the process is detailed and should not be rushed. Plan to make the components over a couple of days, then assemble and chill the cake before serving. Chocolate lovers will appreciate every layer, and because the cake is so rich, small slices are more than enough.

Recipe Tips:
Do not try to make this entire chocolate cake in one day unless you have a clear schedule and a very calm kitchen. The recipe is manageable when broken into stages. Start by making a detailed shopping list, then check that you have enough chocolate, cream, eggs, cocoa powder, and the correct pans before you begin.
- PRO-Tip: Make the brownie layer two to three days before assembly. Once cooled, wrap it well and refrigerate or freeze it. If frozen, thaw it before slicing and assembling the cake.
- Use good-quality semisweet chocolate bars if possible. They melt more smoothly than many chocolate chips and help create a silkier mousse and ganache.
- PRO-Tip: To cut the brownie in half horizontally, place toothpicks around the side of the brownie at the halfway point. Use them as a guide while slicing with a long serrated knife.
- Start with a shallow cut around the outside of the brownie, then continue sawing gently toward the center, rotating the brownie as you work. This helps create two fairly even layers.
- PRO-Tip: The mocha rum sauce can be made ahead. Store it covered, then bring it to room temperature or warm it gently before serving.
- If the weather is not humid, make the meringue the day before assembly. Store it in a dry place so it stays crisp.
- PRO-Tip: Make the meringue slightly smaller than 9 inches in diameter. This makes it easier to fit inside the springform pan without trimming, which can cause the meringue to crack.
- Prepare the mousses and ganache on the day you assemble the cake. The chocolate mousse should be used the same day for the best texture.
- After assembly, allow enough chilling time. The cake needs time to set so the layers slice cleanly and hold their shape.

Instructions
Make the Meringue:
- Preheat the oven to 225 degrees.
- Using a 9-inch cake pan as a guide, trace a 9-inch circle on parchment paper. Turn the parchment over and place it on a baking sheet.
- Place the egg whites, cream of tartar, and salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on high until soft peaks form, about 45 to 50 seconds.
- Gradually add 1 cup of sugar while continuing to beat on high. Whisk until stiff, about 1 ½ minutes.
- Remove the bowl from the mixer. Fold in the remaining ¼ cup sugar, cocoa powder, and cornstarch until combined. Spread the meringue inside the traced circle, leaving about ⅛ to ¼ inch at the edge. Smooth the top and sides with an offset spatula.
- Bake for 15 minutes. Lower the oven temperature to 200 degrees and bake for 2 hours and 45 minutes. Cool for 45 minutes before handling. Increase the oven temperature to 325 degrees for the brownie layer.
Make the Chocolate Mousse:
- Melt the semisweet chocolate in a double boiler over medium heat, or melt it gently in the microwave, stirring often. Once smooth, keep it at room temperature.
- Whip the heavy cream in a chilled mixer bowl until peaks form. Set aside.
- Beat the egg whites in a large bowl until soft peaks form. Add the sugar and continue beating until stiff peaks form. Whisk a quarter of the whipped cream into the melted chocolate, then fold the chocolate mixture into the egg whites. Fold in the remaining whipped cream. Refrigerate until needed.
Make the Brownie Layer:
- Grease a 9 by 1 ½ inch cake pan with butter and dust it with flour, tapping out the excess.
- Whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- Melt the unsweetened chocolate, butter, and semisweet chocolate in a double boiler. Stir until smooth.
- Beat the eggs, sugar, and vanilla in an electric mixer until slightly thickened, about 1 ½ minutes.
- Add the melted chocolate mixture and mix briefly. Add the dry ingredients, then mix in the sour cream. Scrape the bowl to make sure the batter is evenly combined.
- Spread the batter in the prepared pan. Bake at 325 degrees until a toothpick inserted in the center comes out clean, about 30 minutes.
- Cool in the pan for 5 minutes, then turn out onto a cake circle. Refrigerate for 15 to 20 minutes. Cut the brownie in half horizontally and keep at room temperature until assembly.
Make the Ganache:
- Heat the heavy cream and butter in a large saucepan over medium-high heat until boiling.
- Place the chopped semisweet chocolate in a heat-safe bowl.
- Pour the hot cream mixture over the chocolate. Let stand for 5 minutes, then stir until smooth. Keep at room temperature until needed.
Make the Mocha Mousse:
- In a double boiler, combine the semisweet chocolate, unsweetened chocolate, water, instant coffee, and cocoa. Heat gently, then stir until smooth. Keep at room temperature.
- Beat the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff.
- Whip the heavy cream until stiff. Fold a quarter of the egg whites into the chocolate mixture, then fold in the whipped cream. Fold in the remaining egg whites. Keep the mocha mousse at room temperature.
Assemble the Cake:
- Place a 9 by 3-inch springform pan on a baking sheet. Set the top half of the brownie inside the pan, top side up. Spread 1 ½ cups of ganache over the brownie.
- Fit the cocoa meringue on top of the ganache. If needed, trim it gently with a serrated knife. Press lightly to remove air pockets.
- Spoon the mocha mousse over the meringue and spread evenly. Place the remaining brownie half on top, bottom side up. Chill in the freezer for 30 minutes or refrigerate for 1 hour.
- Release the cake from the springform pan. Pour the remaining ganache over the top and sides, smoothing with an offset spatula. Refrigerate for 10 to 15 minutes to set.
- Pipe the chocolate mousse in stars over the top of the cake. Chill for 4 to 12 hours before serving.
Make the Mocha Rum Sauce:
- Prepare the sauce the day before or the day of serving. Bring it to room temperature before serving.
- Melt the butter in a saucepan over medium heat.
- Add the sugar, heavy cream, cocoa, 2 tablespoons of rum, and salt. Whisk to combine. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally. Remove from the heat and stir in the instant coffee, vanilla, and remaining 1 tablespoon of rum.
To Serve:
- Slice the cake with a serrated knife warmed under hot running water. Wipe and warm the knife between slices for the cleanest cuts.
- Serve each slice with a generous drizzle of mocha rum sauce.
Notes
Total time does not include cooling and chilling time.
The cake is very rich, so thinner slices are recommended.
For easier brownie slicing, place toothpicks around the side of the brownie halfway between the top and bottom. Use them as a guide while cutting horizontally with a long serrated knife.
