  • Ground beef: Use 80/20 (lean/fat) for the best balance of moisture and flavor.
  • Breadcrumbs & eggs: These bind the mixture. Eggs add structure while breadcrumbs help hold the loaf together.
  • Milk: Soaks the breadcrumbs and keeps the meat tender during baking.
  • Vegetables: Finely chopped onions, green and red bell peppers, and drained diced tomatoes sautéed briefly in butter add flavor and moisture.
  • Condiments: Ketchup and Worcestershire sauce add depth and tang. Worcestershire is a great boost in most ground beef dishes.
  • Seasonings: Onion soup mix, celery salt, garlic powder, and black pepper are my favorites. Celery salt adds a subtle celery note without the texture of celery pieces.

The glaze can be adjusted to taste. A simple mixture of ketchup and honey or ketchup and barbecue sauce works fine if you prefer a quicker option.

How to make meatloaf

  1. Place 2 lbs ground beef in a large mixing bowl.
  2. Beat 2 eggs with 1/4 cup milk, then add to the ground beef.
  3. Add 1/2 cup breadcrumbs and mix gently to combine.
  4. Stir in the seasonings, 1/4 cup ketchup, and 2 tsp Worcestershire sauce, mixing just until incorporated.
  5. Chop onions, green and red peppers, and drain 1/4 cup diced tomatoes.
  6. Heat 2 tbsp butter in a skillet over medium-high heat.
  7. Add the chopped vegetables and tomatoes with 2 tsp minced garlic and sauté for about 3 minutes until slightly softened.
  8. Preheat oven to 350°F (175°C).
  9. Fold the sautéed vegetables into the meat mixture and mix gently.
  10. Transfer the mixture to a baking dish or loaf pan and shape into a loaf.
  11. Whisk together 1 cup ketchup, 2 tbsp brown sugar, 2 tbsp honey, 2 tsp yellow mustard, and 2 tsp Worcestershire sauce for the glaze. Spread evenly over the loaf.
  12. Bake for 1 hour. Let the meatloaf rest for 10 minutes before slicing and serving.
