Ingredients
- 1/4 cup granulated Swerve or granulated sweetener of choice
- 1/4 tsp salt
- 3 large room temperature eggs
- 2 cups milk of choice
- 1 tsp vanilla extract
- 1/8 tsp ground cinnamon adjust to taste
- 1/8 tsp ground ginger adjust to taste
- 1/8 tsp nutmeg or allspice adjust to taste
Instructions

In a medium saucepan, combine the granulated sweetener and salt. Whisk briefly to blend the ingredients.

Add the eggs and milk, then whisk until thoroughly combined. Break the yolks so they are fully distributed throughout the mixture.

Place the saucepan over medium heat and whisk constantly for about 7–8 minutes. Continue until the mixture starts to steam and reaches roughly 160°F (71°C). If you don’t have a thermometer, watch for visible steam. Constant whisking prevents the eggs from curdling.

Remove the pan from heat and whisk in the vanilla and spices until well combined. Taste and adjust spices if desired.

Strain the eggnog through a fine sieve into a pitcher or mason jar for an extra-smooth texture. Let cool to room temperature, then refrigerate in a covered container for up to 3 days. Serve chilled.
Notes
Yields about 2 large servings. For a lower-carb option, use unsweetened coconut milk or other low-carb milk alternatives.
